R&D / Process Engineer – Retort & Shelf-Stable Beverages and Sauces (Coconut-Based & Functional Foods)
Location:
Thailand (with occasional travel to production sites or co-packers)

We are a dynamic food and beverage company specializing in premium, shelf-stable products for export markets—including coconut water, coconut milk, tropical fruit juices, nata de coco beverages, herbal teas, probiotic drinks, electrolyte beverages, functional teas, and retorted sauces. Our focus is on clean-label, high-quality products packed using advanced thermal processing such as retort, hot-fill, and aseptic systems.
To support our growing innovation pipeline, we are seeking a hands-on and solutions-oriented R&D / Process Engineer to lead the development and optimization of shelf-stable canned, bottled, and pouch-based products.
Key Responsibilities:
Formulate and optimize a wide range of shelf-stable products:
Coconut water, coconut milk, tropical juices, nata de coco beverages, herbal teas, probiotic drinks, electrolyte drinks, sauces, and condiments
Conduct pilot and production-scale trials for thermal processing including retort, hot-fill, and aseptic
Design and refine processing parameters: retort profiles, vacuum levels, fill temperatures, dwell times, pH/°Brix balancing
Troubleshoot issues such as ingredient separation, heat degradation, foaming, or color loss during retort or thermal processes
Oversee microbiological and shelf-life testing in coordination with QA and external labs
Ensure compliance with regulatory and export standards (Thai FDA, US FDA, USDA Organic, EU standards)
Collaborate with co-packers, equipment suppliers, and cross-functional teams to ensure successful scale-up
Maintain R&D documentation, SOPs, processing records, and support product registrations
