INTRODUCTION Vitatrade is a fast-growing QSR and Wholesale distribution company within the F&B segment. The company manages 5 brands, “Makai Acai & Superfood Bar”, “GRAIN Thailand”, “Knead Me”, “Austro Pro” (wholesale), and “Vitatrade” (Wholesale). Job Description: We are seeking a skilled and experienced Sous Chef to join our team as the Central Kitchen Manager. The Sous Chef will play a critical role in overseeing the operations of our central kitchen, including menu planning, food production, quality control, and staff management. The ideal candidate will have strong culinary skills, leadership abilities, and a passion for delivering high-quality food products to our customers. RESPONSIBILITIES: • Lead and manage the day-to-day operations of the central kitchen, ensuring efficient and effective food production and workflow. • Develop and maintain standardized recipes, production schedules, and quality control procedures to ensure consistency and excellence in food preparation. • Collaborate with the culinary team to plan menus, create new dishes, and optimize production processes to meet customer demand and operational goals. • Supervise and train kitchen staff, including chefs, cooks, and kitchen assistants, to ensure adherence to food safety standards, sanitation guidelines, and culinary techniques. • Monitor inventory levels, order supplies, and manage food costs to maximize profitability while minimizing waste and spoilage. • Conduct regular inspections of equipment, facilities, and storage areas to ensure cleanliness, safety, and compliance with health regulations. • Coordinate with other departments, such as procurement, logistics, and quality assurance, to streamline operations and resolve any issues or challenges that arise. • Maintain accurate records of production activities, inventory usage, and product specifications to support operational efficiency and traceability.
Qualifications
  1. Proven experience as a Sous Chef or similar role in a central kitchen or large-scale food production environment.
  2. Culinary degree or certification from a recognized culinary school or institution.
  3. Strong leadership and management skills, with the ability to motivate and inspire a team of kitchen staff.
  4. Extensive knowledge of food safety standards, sanitation practices, and HACCP principles.
  5. Excellent culinary skills, with a creative flair for menu development and recipe innovation.
  6. Ability to work under pressure in a fast-paced environment and prioritize tasks effectively
  7. Proficiency in kitchen operations, equipment usage, and culinary techniques.
  8. Excellent communication, organizational, and problem-solving abilities.
  9. Flexibility to work evenings, weekends, and holidays as needed.
  10. 4+ years relevant culinary experience including international cuisine
  11. Strong knowledge of par cooked techniques for centralized kitchen model
  12. Strong knowledge of operational efficiency for QSR model
  13. Willing to travel to Central kitchens and visit restaurants within Bangkok
  14. Ability to work with senior management of organization
  15. Ability to position products against competitors
  16. Excellent verbal and written communications skills (Native Thai speaker required)
  17. Team player, highly motivated, highly self-organized and self-directed
  18. Self-Motivated and ambitious with social and outgoing personality with the desire to move up in the organization
  19. Willing to adapt to hours and schedule as needed
  20. Basic English conversational skills
